It’s Not Just a Pie…It’s a Raspberry Pie

I bought a large baking dish for pie. It was nice to add some other dish to my kitchen collection. It stayed in the cabinet for only a couple of hours. Can you guess why? I’ll tell you! Because, I wanted to bake a pie.

Here is my simple and very quick recipe for a raspberry pie:

ingredients:

  • 2 1/2 tea cups flour;
  • 1 tea-cup unsalted butter (soft, but not melted);
  • 1 tea-spoon sugar;
  • 1 tea-spoon salt;
  • 7-8 tea spoons cold water (I used more);
  • jam (I used raspberry jam, but you are free to use any other jam you like. Just make sure it is not too watery).

This recipe I took from this blog – Cooks and Bakes, but since it is in Bulgarian, I’ll translate it to you. I only added 1 tea-spoon vanilla to the recipe and more tea spoons water. I also did not make the filling. I just put a raspberry jam instead.

How to do it:

The hardest part of the recipe was the making of the dough. It was crumbly at first, but as the lady who originally wrote the recipe, you have to work it up. So, first you put the flour, salt, sugar and vanilla in a bowl and mix it. Then you add the cold soft butter and the water. Mix it up again. Here is the hard part – work it up. I put some flour on the table to make it easier and added more water to the dough. Finally, when it was ready I wrapped it in a tin foil and put it in the freezer for 10 minutes. You can put it in the refrigerator for 20, if you have more time.

After that, take the dough out and separate it into two pieces. Roll the one piece out and put it in a large baking dish. If you have on that is specially for pie – great! Make sure you cover the walls of the dish as well. Then put the jam. With the other piece you can decorate the pie. I always joke about the fact that my pie is “behind bars”. There are lots of videos in the Internet, where you can check how to do so. Spread some butter on the “bars” and if you want, you can spread some sugar on it as well.

Bake the pie on 200 degrees (Celsius) for 20 minutes, and then continue to bake it on 180 degrees (Celsius) till it is ready. Now, eat it!
